BA Search Filter only inside a specific category

inside my site umbriamylove.it I need to filter tours inside a specific category, not inside all the tours categories, as it happens at the moment.

Can you please indicate the widget that lets obtain this feature, or at least a solution for my necessity?

Coming to the actual problem perhaps I didn’t explain myself, the filter which I mean is the one you can see at this link: http://grafichero.it/support-triply/BA%20filter.jpg.
Is there a way to make that filter search inside only one category and not inside all of them?

For the problem of the filter: yes we understood the functioning of the taxonomies but we need to search only inside a single category regardless the choice of the user, at the moment the filter searches inside all categories http://www.grafichero.it/support-triply/BA-filter-2.jpg.

Is it possible to obtain that feature in some way?
