Choose which “shop list” and “product layout” to use

I’m using the demo v1, which by default uses “Shop sidebar” for shop list and “product left sidebar” for product layout. I want to set others as default, specifically “Shop category icon” for shop list and “Vertical thumbnail” for product layout. How can I do this?
